I love the combination of the cooked and fresh berries in this tart. Frozen berries work fine for the portion that is cooked, but fresh berries are much better for the ones folded in at the end – they provide great texture that you just can’t get with frozen berries. I love adding fruit to my salads but nothing dominates the dish quite like the watermelon. This salad is delicious but very moist (i.e. watermelon) so don’t toss everything together until you’re ready to sit down to eat. I made this salsa on one of the first sunny and semi-warm days this spring. After a little yard work, we felt ourselves entitled to a snack. In the time it took us to bake up some chips (see how to do that here), we had a bowl of salsa waiting. This salsa is perfect for a hot summer day, or just any day you’re wishing was sunshine-filled.
Mango is definitely the dominant flavor here, so feel free to play with the amounts of the other ingredients if you want a more dominant lime or heat component.
