This pizza is a happily messy affair. The herby chimichurri sauce spooned over the top is a bit of a mess but one that is well worth it. Combined with spring asparagus this pizza is a tasty, vibrant dish.

Pesto Mushroom and Potato Galette
The flaky pastry dough makes this a rich dish that is best served alongside a salad. This galette is delicious with the Arugula-Parsley Pesto but any pesto you have will work well.

This soup is one of our favorites. The tortillas blended into the soup give the broth an added dimension and the chipotle in adobo adds a subtle but pleasant heat. If your heat tolerance is low, use less or if you want a spicier soup, use more. Make sure that you are pulling out a chipotle pepper to use and not just scooping up the adobo sauce (although the sauce is delicious, it won’t provide much heat).

Corn is hard for me to resist in the summer. I can’t help snagging an ear or two every time I’m at the store and they tend to make their way into most of our summertime meals. These tacos are a favorite of mine. The fresh corn and jalapeno make this a fresh and delicious summer meal. This recipe is also easy to scale up if if you’re feeding more than two.
