The herby chimichurri sauce provides a big flavor boost to the rice and tuna. In addition to just being delicious, tuna is very high in protein and makes a great meal while backpacking.

I love these pancakes because they’re easy to eat on the go. We’re usually not too hungry first thing in the morning, so I love having breakfasts that I can eat on the trail once I start feeling hungry. These are hearty and very filling, especially with the nut butter on top. If a warm breakfast is important, you can reheat these in your pan.

This makes a pretty hearty meal, so I’ve scaled back just a bit on how much dried pasta I would typically bring for two people. The chicken, pesto, and cheese are filling and we found we just didn’t need quite as much. However if you know it’s going to be a high mileage day and you typically need a lot of food, bump the pasta back up to 8 oz total.
