Mango Salsa

I made this salsa on one of the first sunny and semi-warm days this spring. After a little yard work, we felt ourselves entitled to a snack. In the time it took us to bake up some chips (see how to do that here), we had a bowl of salsa waiting. This salsa is perfect for a hot summer day, or just any day you’re wishing was sunshine-filled.

Mango is definitely the dominant flavor here, so feel free to play with the amounts of the other ingredients if you want a more dominant lime or heat component.

Mango Salsa

Serves 4

2 ripe mangos

1 red bell pepper, diced

2 jalapenos, diced

¼- ½ bunch cilantro, roughly chopped

Juice from 1-2 large limes

Peel the mangoes. Cut the flesh of the mango away from the core by slicing off a section and laying it flat along that edge, so that it is stable and secure while slicing. Continue until you’ve cut all the flesh away from the core, then dice. Combine in a bowl with the rest of the ingredients. Taste and adjust the lime juice and salt as necessary. Serve with tortilla chips, alongside grilled chicken, or in a burrito bowl.
