Basil Vinaigrette
This is a delicious dressing in the summertime when basil is abundant. The walnut oil adds depth to the flavors and I love its addition here. However if you don’t have walnut oil but you do have a giant pile of basil, olive oil will also work.
Basil Vinaigrette
Yield: about 1 cup
2 large cloves garlic
About 1 ½ cups packed (2 oz) basil
1 ½ Tb red wine vinegar
3 Tb lemon juice
1 ½ tsp salt
½ cup walnut oil
In a food processor, pulse the garlic until only small pieces remain. Add the basil, red wine vinegar, lemon juice, and salt and process until the mixture is fairly well combined. Scrape down the sides of the bowl and pulse to incorporate any remaining larger pieces. With the food processor running, slowly add the oil to the mixture. Taste and make any adjustments to the salt and lemon juice.
